Theories
The speculations began when the July 18th had an undocumented change. "Added "Grockets" to ctf_2fort, pl_badwater and pl_barnblitz". There has been speculation over the possibility of this being Valve's hint towards the "Meet the Pyro" video and update, acting much like the Doves in the "Uber Update".

The point of disagreement is how the Grockets themselves connect to the pyro. One of the arguments is that the pyro had a rocket in Team Fortress Classic, thus providing some connection to the Pyro, without Valve making it obvious. The Napalm rocket itself looks remarkably similar to the Grocket, sharing a color scheme and shape. This speculation is contributied to "SIBW ◌ Agent Trap" and "Rage-A-Rainbow!"

Another possibility is that the Grocket relates to a rocket launched on the same date. On July 18th 1996, Gemini 10 was launched from Cape Kennedy on a 70 hour mission. 70 hours converts to roughly 3 days. There were 3 rockets, on 3 maps, and 3 days away for the usual update day (Thursday). (Information up to this point thanks to "Boarbeque" on the Steam forums)The Pyro is the 3rd class on Team Fortress 2. This makes it a stronger connection to the Pyro.

Other speculations thus far include:

The Soldier Garbage Pack

A new engineer update

Alien Swarm 2

Half Life 3 (The launched rocket from the end of Episode 2)

A new unnamed Valve title

Gabe Newell trolling his fans with a G Model Rocket which would land in a position like the rockets in the 3 maps.

The Grocket model.

Grockets appear in 3 maps; 2Fort, Badwater Basin and Barnblitz. They have the appearance of crash-landed rockets with smoke and flames billowing out. It should be noted that the panels sticking out near the nose of the rocket are elements meant to help blend the model into its surroundings, not parts of the actual rocket.
